In a bowl cream the butter and the sugar until light and fluffy
then beat in the two eggs.
Fold in the sifted self raising flour then
slowly add the milk followed by the vanilla.
Pour into greased cake tin and bake at 180
degrees c for about 30-40 minutes.
Remove from oven once cooked an cool on a
cake rack.
Cake is best left overnight to firm up
before continuing the process.
Cut cake into lamington pieces
Make the icing mixture by pouring boiling
water over butter and adding cocoa. Mix in the icing sugar until
smooth.
Dip each piece of cake into the mixture
until all sides are covered then roll into the coconut.
Leave on a cake rack to set before serving.
For an added treat, cut lamington in half and add strawberry jam
and thickened vanilla cream....absolutely delicious!. |
